Minced Mallard Tartare with Mango Salsa

Serves 4
This easy tartare is a great way to elevate the ducks from this season’s hunt to share at your next
holiday party.
Ingredients
∙Skinless, boneless breasts from 1 Mallard duck
∙2 Tablespoons olive oil
∙1 teaspoon Dijon mustard
∙1 teaspoon Worcestershire sauce
∙1 teaspoon lime juice
∙1 teaspoon minced garlic
∙1 Tablespoon yellow or red onion, minced
∙1 Tablespoon jalapeno pepper, minced
∙2 Tablespoon fresh parsley, chopped
∙1/8 teaspoon salt
∙1/8 teaspoon black pepper
∙1/2 cup mango salsa
∙Lime zest
∙Corn chips
Instructions
1.Mince the mallard breasts and place in a bowl. Add remaining ingredients (except for the
mango salsa) and mix well to combine.
2.Divide the meat mixture into 4 equal servings and press each serving into a 3 ¾-inch
pastry ring or similar size cookie cutter.
3.Divide the mango salsa into 4 equal servings and spoon on top of the meat mixture.
4.Garnish with lime zest and serve with corn chips.
